The forgotten Bishop’s cap
You could be forgiven for never having heard of it before. But this almost forgotten fruit-slash-vegetable is just one of many enjoying a revival thanks to one of the finest grocery stores I have ever encountered: “Lizzy’s nieuwe oogst” (or “Lizzy’s new harvest”) in Belgium.
Also called the turban squash or patisson, this cross between a zucchini and a pumpkin comes in all kinds of colours and can grow up to around 20cm in diameter. Delicious in a stir-fry, a stew, a hearty curry or even on the BBQ.
